Apple and Raspberry Crumble

150g Butter

250g Plain or gluten free flour

1/4 cup Sliced almonds

1/4 cup Desiccatted coconut

1/2 cup Rolled oats

1/3 cup Castor sugar

Cinnamon to taste



8-10 medium sized apples

1/2 cup brown sugar

1 cup frozen raspberries

Splash of water



To make the crumble topping


Mix the flour, butter and sugar by hand, using you finger tips until fully combined and a breadcrumb look has been achieved

Mix in the oats, coconut and almonds into this mixture and set aside


To make the filling


Peel, de-core and dice the apples. Chopping wise I usually cut each 1/4 apple into 3 pieces as I dont like them to small.

Mix with the raspberries and brown sugar until well combined.

Put a splash of water at the bottom of your deep baking tray.



To bake

Pre-heat the oven to 180C

Put the apple mixture at the bottom of a deep baking tray

Evenly add the crumble mixture to cover

Put in the oven for 30 minutes, every 10 minutes gently mix the crumble topping so it is all baked evenly
