Chocolate Mousse


This recipe featured on our home-made series cooking with Henry where I shot a series of basic cooking videos with my 7yo son. Enjoy the video here.



200g Dark chocolate, at least 50%, the better quality, the better the mousse

4 Large eggs, separated

300ml Cream

50g Castor sugar


In addition to the above you need extra ingredients if you want other flavour alternatives, some things we have used for example are "Fresh As" freeze dried fruits, raspberries, caramel, peanut butter, orange juice and zest. Anything that goes with chocolate is able to be put into chocolate mousse.



Setup a double boiler with the chocolate in the bowl and melt.

With your separated eggs whip the egg whites to stiff peaks.

Slowly add the sugar whilst still mixing the eggs.

Separately, whip the cream until thickened.

By now the chocolate should be melted, cool for 5 mins off the stove and quickly mix in the egg yolks.

Fold 1/2 of the egg whites into the chocolate, then the other half.

Now fold in the cream an finally fold in extra chosen ingredient if you are wanting to flavour your mousse
