Raspberry and White Chocolate Cookies

Ingredients

125g Butter, softened but not melted

115g Castor sugar

115g Brown sugar

1 Egg, beaten

½ tsp Vanilla extract

145g Flour

Pinch Salt

175g White chocolate chips

80-100g Frozen raspberries

 

Method

Pre heat the oven to 180®C

Mix 125g butter with castor and brown sugars, cream these until thoroughly mixed

Mix egg and vanilla extract into the sugar mix

Fold in the flour and salt

Add the chocolate and raspberries and fold these in as well

Shape into golf ball sized balls

Place onto a greased tray and flatten slightly

Bake for approximately 10-12 minutes

Remove from the oven to a cooling rack
