This is a recipe for a simple sweet pastry; you could use this in my lemon meringue recipe.
1 tsp. Salt
5 tablespoons Sugar
400g Butter (it should be diced and then chilled)
2 Egg yolks
½ a Lemon juiced
- 1. Combined sifted flour with salt and sugar.
- 2. Mix in butter using the rubbing in method until the mixture looks like breadcrumbs.
- 3. In another bowl whisk the egg yolks, water and lemon juice.
- 4. Using a spatula combine the ingredients and leave to rest for at least 1 hour before using.
