Sweet Pastry

This is a recipe for a simple sweet pastry; you could use this in my lemon meringue recipe.


600g Flour

1 tsp. Salt

5 tablespoons Sugar

400g Butter (it should be diced and then chilled)

2 Egg yolks

Splash Water

½ a Lemon juiced



  1. 1. Combined sifted flour with salt and sugar.
  2. 2. Mix in butter using the rubbing in method until the mixture looks like breadcrumbs.
  3. 3. In another bowl whisk the egg yolks, water and lemon juice.
  4. 4. Using a spatula combine the ingredients and leave to rest for at least 1 hour before using.
