A croque monsieur is a few things, it is a toasted sandwich, its oozy and cheesy, it is a meal in itself and it is without a doubt the best hangover cure EVER! My croque however is far from traditional, the French usually use a béchamel with cheese (béchamel is white sauce and with cheese is Mornay) and this is the base of the sandwich. My way is less complicated and more accessible to the home cook. You can make it in minutes. I also use them for canapés by making mini versions!
Ingredients
200g Creme fraiche
200g Cream cheese
80g Dijon mustard
300g grated cheese
50g butter
8 Slices of thick white bread
8 slices of ham
4 eggs (fried and put on top, this becomes a croque Madame!)
