Asparagus Maltaise Canapé


Just pop this beautiful mixture into a filoette or pastry cup, it’s a great fresh canapé with a light mayonnaise flavoured with dill and orange to accompany asparagus.


Ingredients – Makes approximately 20 canapés

1 Bunch asparagus (5-7 spears)

1 Orange zest and juice

300ml Mayonnaise (preferably homemade)

50g Dill (chopped)

20 Filoettes



  1. 1. Trim the ends of the asparagus and bar mark on a grill or briefly cook in boiling water until tender.
  2. 2. Chop them into thin slices from top to bottom. (If they are thick spears consider slicing them in half first)
  3. 3. Zest and juice one orange and mix with mayonnaise and chopped dill.
  4. 4. Mix in the asparagus and fill the pastry cups.
