Hobsonville Market Croque Monsieur – Serves 20


250g Cream cheese

150g Strong Flavoured Hard Cheese

50g English mustard

Salt and pepper to taste

1 Loaf of Focaccia or Ciabatta

100g Coppa or other Italian cured meats



1. In a bowl mix all the cream cheese, grated hard cheese, English mustard and season with salt and pepper.

2. Set aside.

3. Slice your choice of bread in half across the middle.

4. Spread your mix half on the top half on the bottom.

5. Now layer the ham on one side and bring together to make a sandwich.

Preferably at this stage leave overnight in the refrigerator.

6. Bake in the oven at 200 degrees until the cheese mixture is oozing and the bread is toasted.

7. Cut into 20 even canapé sized pieces.

8. Serve.



Hobsonville Market Sweet Chilli Glazed Salmon – Serves 20


250g Sweet chilli sauce

50ml Water

300g Salmon fillet

Rockhaven Estate Lime oil to finish



1. In a bowl mix the chilli sauce with the water.

2. Spray a tray with a little oil or rubbed it on if you don’t have a spray and place the salmon on skin down.

3. With a pastry brush lather the salmon in the sauce.

4. Bake at 200 degrees for 20 minutes or until cooked dependant on your oven, reglazing the salmon with the pastry brush every 5 minutes.

5. When it is cooked and you feel confident handling it cut into 20 pieces and serve on its own, in ceramic Chinese spoons or even on some toasts or crostini’s.


Hobsonville Market Parfait and Capsicum Chutney – Serves 20


1 Pot My recommendation of Genevieve’s Truffled Parfait or make you own

1 Red capsicum

1 Red onion

3 Radishes

50ml Earthbound Vinegar Honeygar

50g Earthbound Honey Manuka Honey



1. Firstly we deal with the chutney.

2. Dice as finely as you can the capsicums, red onions and radishes.

3. Add to a pot with a touch of oil and sweat slowly being careful not to darken the colour.

4. When the ingredients are soft DEGLAZE (add liquid to get the flavour from the pan) the pan with the vinegar and remove immediately.

5. Add and mix in the honey then set aside to cool to room temperature.


6. For the parfait now you will either have the pre bought or pre made, spread onto your favourite bread or cracker and just add the chutney. Simple!


Hobsonville Market Cherry tomato, Salami and Goat Gouda skewers – Serves 20


10 Cherry tomatoes

300g Salami NOT SLICED

300g Goat Gouda or other durable cheese of your choice remembering it is going to be skewered!

20 Small cocktail skewers

Splash of oil



1. Simple canapé recipe

2. Halve the cherry tomatoes and cut the salami and cheese to the same size.

3. Skewer and bake with a little oil until the cheese just begins to melt.


Hobsonville Market Butter Chicken and Coriander Chicken - Serves 20


4 Free Range Chicken Breast

100g Coriander

½ jar NAAZ Butter Chicken Paste, mild medium or hot

Rockhaven Estate Lime oil to finish



1. Slice the chicken breast in to tenderloin sized pieces.

2. Add to a bowl with chopped coriander and the curry paste. Mix and allow to sit overnight in the fridge.

3. In a hot frying pan with a little oil add the chicken and cook until golden brown on both sides, this should be enough to ensure the chicken is fully cooked.

4. Sprinkle with the lime oil and serve on a dish with some cocktail sticks.
