This is such an elegant dish for a dinner party, I once used this dish as part of a nine course food and wine matching menu as the fish course. Give it a try it’s fairly simple as well and the results are spectacular. Serve with silver beet, spinach, broccoli or another preferred green vegetable as a beautiful colour contrast. The sauce should be velvety and clean tasting.

4 John Dory fillets or other white fish
8 prawns raw and de shelled
300ml Fish stock
50ml White wine
1 Juice and zest of lemon
150ml Cream
50g Chives
