Pasta Dough


After filming a recent video to show how easy it is to make homemade pasta. Here below is the recipe to go with it. You can find the video on my Facebook page


For this recipe it would be helpful to have a a benchtop electric beater with dough hook and a pasta roller, however I do have alternatives for you mentioned below.



4 small-medium or 3 large free-range eggs, beaten

2 cups flour or "OO" flour

1 tablespoon olive oil




In a bowl mix the beaten eggs, flour, olive oil and salt. This mixture should come together and will likely be a bit crumbly. If a little dry a splash more olive oil.


In your mixer attach the dough hook and put onto a medium setting for 10 minutes to knead the dough until it is soft like play-doh texture. NOTE: If you don't have the mixer you can do by hand for approximately 20 minutes until the same texture as above is achieved.


This then needs to be rested in the fridge for AT LEAST 30 minutes wrapped in glad wrap, even better to rest over-night. Remove from the fridge around 30 mins before you want to use it so it goes a little bit soft again.


Now if you are using a pasta machine, set it up and roll through as per the instruction manual. Some can tend to differ but for sure make sure you go through each of the thickness stages 1 by 1 and don't skip a stage.


If you are doing by hand with a rolling pin. Roll the sheets as thin as possible. They should almost be translucent then either use a knife or by a cheap pasta cutter available at most kitchen shops.


If you are making spaghetti with this recipe it should cook in boiling, salted and oiled water in around 90 seconds.
