Cumberland sauce

This is one of my favourite all time sauces so simple and absolutely delicious. This is a traditional English sauce which is great with all poultry and game.



500g Port Wine Jelly

100ml Chicken stock

100ml Red wine

15g Shallots

1 Tablespoon Wholegrain mustard

2 Oranges juiced and zested

1 Lemon juiced and zested



  1. 1. In a small pot heat the jelly until it melts then add the red wine and chicken stock and reduce by a quarter.
  2. 2. When it is hot mix in the shallots, mustard, and citrus.
  3. 3. Cool and serve with your favourite game or poultry dish. See that simple!
