Thai Dressing


This is a delicious, sweet and sour recipe which only has a little background heat so it doesn’t blow your head off but if you like more heat simply add more chilli.



2 Red chilli deseeded

2 Cloves of garlic

150g Palm sugar

5 Zest and juice of limes

10ml Oil

100g Root and stem of coriander

30ml Water



  1. 1. Finely chop the chilli and garlic.
  2. 2. Add them to the oil, water, limes juice and zest and the palm sugar.
  3. 3. Cook slowly and reduce by half and add the coriander at the end which has also been wash and finely chopped.
  4. 4. When it cools you should be left with a syrup texture.
