Pork and Fennel Sausage Rolls

1 Onion, finely diced

10g thyme leaves

1kg pork mince

1 Carrot, grated



4tsp Fennel seeds

4 Sheets flaky pastry

2 Egg yolks

4 Sheets flaky pastry

Spray oil



Pre heat the oven to 180C

Slowly saute the finely diced onion until just turning translucent and then cool it down slightly

Mix the onion, grated carrot, thyme, pork mince, salt and pepper in a bowl and pound togheter until well combined.

Lay out your pastry sheets and add the mixture in a sausage shape to the pastry and roll the pastry around the meat mix to seal.

Once rolled cover with egg yolks using a pastry brush and sprinkle on the ramaining fennel seeds.

Repeat this until all the mixture has been used.

Cut into desired size and place onto a greased oven tray.

For large sausage rolls bake for 40minutes for small ones approximately 25mins.
