Pea, Mint and Walnut Bruschetta

Bruschettas are great, find some delicious bread, grill or toast it and add your favourite toppings. You can't go wrong really and there are so many possibilities. Here is just one flavour you could make, the peas make it very refreshing and the mint lifts the whole flavour of the mix.



1 Loaf of ciabatta or sourdough slice about 1 inch thick. (Go Artisan an make sure it is palm oil free)

1 Clove of garlic

200ml Olive oil

400g Peas pre blanched and refreshed.

100g Mint

100g Walnuts

Salt and pepper

250g Good aged cheese like Gouda



1. Heat your grill or oven to toast the bread. Use half of the olive oil and sprinkle on the bread and then rub the garlic clove all over the bread. Set aside until you are ready to cook.

2. Meanwhile in a food processor add the peas, remainder of the olive oil, mint, salt and pepper and process on pulse a few times to slightly blend the mixture then add the walnuts and pulse twice more again.

3. When you are ready to serve, toast your bread until it just chars and remove.

4. Add a quenelle of the mixture and top with your favourite aged cheese.
